THE IVY COLLECTION SERVES UP THE ULTIMATE SPORTING SUMMER WITH NEW SEASONAL MENUS, CASAMIGOS TEQUILA COCKTAILS AND EXCLUSIVE SPORTING EVENTS CALENDAR

This summer, The Ivy Collection* is inviting guests to make a sport of spectating, unveiling a new seasonal menu designed to accompany every moment of the summer sporting calendar. Whether fuelling up ahead of an early morning race, pausing for a long lunch between matches, or booking in to get the inside scoop at an evening with a sporting star, The Ivy Collection is the ultimate destination for summer sport spectatorship done in style.

 

Launching across The Ivy Collection restaurants nationwide, the new menu celebrates the rituals that surround the season’s biggest sporting moments, pairing vibrant seasonal dishes with a specially curated Casamigos Tequila cocktail collaboration crafted exclusively for the sporting summer. Beyond the seasonal menu, The Ivy Collection will also bring the sporting calendar to life through a series of limited-edition menus and celebratory dishes inspired by some of summer's most iconic events. From a Champagne Breakfast created for Royal Ascot and race day specials marking the Qatar Goodwood Festival, to The Centre Court Bombe served during Wimbledon and the LBW cricket ball-shaped dessert inspired by the summer's cricket fixtures, guests will find new reasons to return throughout the season.

The new starters introduce a series of refined classics and lighter seasonal plates, including a quintessentially English Potted Shrimp with seasoned butter, dill-pickled cucumber and granary toast, alongside Steak Tartare with Toast, featuring hand-cut sirloin steak served with shallots, cornichons, capers, mustard, parsley and egg yolk.

 

New main courses bring globally inspired flavours and lighter summer dining to the forefront. Highlights include Queen Scallop and Prawn Linguine with capers, samphire, red chilli and a rich lobster cream sauce finished with coriander and lemon zest; Gochujang-glazed Aubergine Salad with sesame, pickled radish, wonton, sticky rice and jalapeño avocado dressing; Moroccan-style Boneless Half Chicken served with toasted almonds and ras el hanout tomato sauce with aubergine, olives and golden raisins; and Korean-glazed Grilled Chicken Salad with sesame, crushed avocado, edamame, sticky rice, pickled mooli and miso ponzu dressing.

 

For brunch, guests can enjoy the new Steak and Eggs, featuring chargrilled thinly-beaten steak, fried free-range hen’s eggs and triple-cooked chips - designed as the perfect pre-match or recovery breakfast during the busy sporting season.

 

Desserts bring a nostalgic yet elevated finish to the menu, including a classic Tiramisù layered with coffee and marsala soaked savoiardi biscuit, mascarpone and cocoa powder, alongside the Raspberry and Pistachio Coupe with raspberry sorbet, pistachio mousse and raspberry sauce.


Complementing the menu, The Ivy Collection has partnered with Casamigos Tequila to create a bespoke cocktail selection inspired by the atmosphere and excitement of the sporting season. Designed as the perfect accompaniment to a pre-game aperitif or a post-match debrief, the cocktails include the Match Day Margarita with Casamigos Blanco, Beesou, lime, hot honey and peach; the Pitch Side Paloma with rhubarb, madeleine and pink grapefruit; the Victory Lap combining Casamigos Blanco, elderflower and Champagne with a coconut fragrance; The Tiebreak, a playful take on a Bloody Maria with bloody tomato juice; and The Finish Line Float with pineapple and Coca-Cola, topped with Chantilly.

 

What’s more, The Ivy Collection restaurants** will also serving up The Ivy Summer of Sport Cuvée, this summer. Perfect for raising a glass to a winning team or toasting to sporting legend, the English sparkling wine boasts delicate notes of green apple, citrus, and a hint of brioche. “The summer sporting season is about so much more than the game itself - it’s about the atmosphere, the rituals and the moments shared around it,” says Mark Askew, Group Executive Chef at The Ivy Collection. “This menu has been created to complement those occasions, whether guests are joining us before an event, between fixtures or celebrating long after the final whistle. Combined with our Casamigos Tequila cocktails, we wanted to create a menu that feels vibrant, social and unmistakably summer.”

 

The new summer menu will be available at The Ivy Collection restaurants nationwide from Wednesday 3rd June with the Casamigos Tequila cocktail selection launching on Friday 5th June. Guests are invited to book their table.

As part of its Summer of Sport programme, The Ivy Collection will also host a series of exclusive live events designed to give guests the inside track on the season's biggest sporting moments. From football and horse racing to athletics and cricket, the ticketed experiences will bring together athletes, commentators and sporting insiders for intimate evenings of conversation, predictions and behind-the-scenes stories.


Highlights include an evening with Sir Geoff Hurst from the England football line up that won the 1966 World Cup and the Team GB 4x100m relay squad ahead of this year's Commonwealth Games, offering guests a rare opportunity to hear directly from some of Britain's sporting legends and fastest athletes as they prepare to compete on the international stage. Further events will be revealed throughout the summer.
